MAZA
Maza, loosely translated, means mini servings of many different salad dishes, the Lebanese eat small servings of several salad dishes for this “Maza”. The Hedary Family varies the dishes in the Maza daily. Order the Maza to introduce yourself to Lebanese food for it presents a good sampling of the Hedary’s salads.

TABBULI
The salad with mouth-tickling texture and taste. Burghul (crushed wheat) mixed with parsley, onion, fresh tomato, and dressed with lemon juice and olive oil.
KHYAR BIL-LABAN
Crisp cucumbers, garlic, and a hint of mint folded into a refreshing yogurt salad.
HEDARY’S SALAD

LAHM MISHWI
Shish Kabob, tender and succulent ribeye cubed and charbroiled with fresh ripe
tomatoes and onion quarters laid on a bed of rice.
KAFTA
Finely ground sirloin with a savory blend of onion, parsley, and spices shaped into long, fat
links, charbroiled, and sit on a bed of rice, set off with grilled tomatoes and seasoned onions.
MQANIQ
Lebanese pork sausage that the Hedary’s make themselves with fresh pork, white wine,
coriander, and other tempting spices. Lemons are squeezed on the plump sausages right
before they are served with hot Lebanese bread.
SUJUK
A generous portion of the Hedary’s own hot beef sausage bathed in lemon juice and
brought to you with piping hot, fresh baked bread, and fresh tomato slices.
KIBBI
A mixture of ground beef or lamb (your choice) and burghul (cracked wheat) stuffed with
onions and spices. This inviting dome shaped Kibbi is grilled or fried to your preference.
